Yes, I do so love the cowardly lion from the Wizard of Oz.  But, I love this almost 70 degree weather we're expected to be blessed with at least one day this week even MORE!!  God is finally listening to me!!  I SO loathe the winter, cold, and snow.  I am so very grateful for the mild winter we've had this season.  I do know that the worst is probably yet to come since February (although it's my birthday month) is usually quite a depressing sight -- weatherwise, at least.  But maybe, just maybe we can make it 29 days with no snow.  Hmm....that'd be awesome!

You know what else is awesome?  Meal planning when the weather is mild outside!! There are so many more options!  How's the weather in your neck of the woods?  Here's what we're feasting on to celebrate this week:

 Monday: Burgers grilled out, seasoned fries, deviled eggs.

Tuesday:  Slow-cooked pot roast with potatoes and veggies, rolls

Wednesday:  My oven baked chicken, rice, cheddar baked biscuits. (Bumped from last week since we went out for dinner instead).

Thursday:  Tacos, Spanish rice.

Friday:  Pizza or out.

Saturday: Out.

Sunday - Headed to a Superbowl party with friends (probably).

Baking with Toddlers: Nutella Peanut Butter Oatmeal Cookies {recipe}

A friend of mine who runs MommaCooks shared this fabulous recipe for cookies yesterday.  As I was scrolling through my Facebook feed, I noticed she posted it in celebration of National Peanut Butter Day so I decided -- what the heck -- I'll make these after lunch!  I was also giddy that I had in fact packed my older two kids with pb&j sandwiches for lunch without even knowing it was a celebratory day for peanut butter.  Extra gold stars for this mom!

So that's Jacob -- baking along with me and enjoying every minute! I was so glad the hubs was able to snap this pic and actually got not one, but BOTH of us smiling!  It's moments like this that I know will be gone in an instant because in about five minutes he'll be starting Kindergarten.

Do you ever see those kinds of photos that just make you nostalgic for your kids' childhood?  I have a feeling this will be one of them.

Now to the REALLY good part -- here is the fabulous recipe that we used (with just one sub) for the yummy cookies!  By the way, I should mention that Nutella is practically a food group in my house.  No lie.

Nutella Peanut Butter Oatmeal Cookies

What you need:

1/3 cup butter
1/2 cup white sugar
1/3 cup packed brown sugar
1/2 cup peanut butter
1/4 cup Nutella or other chocolate spread
1 teaspoon vanilla extract
1 egg
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup instant/quick oats
1/2 cup semisweet chocolate chips
 
What you do:

Preheat oven to 350 degrees.
 
In a medium bowl, cream together the butter, white sugar and brown sugar until smooth. Stir in the peanut butter, Nutella, vanilla and egg until well blended. Combine the flour, baking soda and salt; stir into the batter just until moistened. Mix in the oats and chocolate chips until evenly distributed.

Drop by tablespoonfuls on to lightly greased cookie sheets.
 
Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely.

Don't dawg on Paula, now!

Last week Paula Deen {probably my most favorite TV foodie} revealed during a Today Show interview that she was diagnosed a few years ago with type 2 diabetes.  And, boy did that open the floodgates for the dog pound to pounce all over her!

 What really got my blood boiling was this post over on some lame vegan blog.  I mean, seriously -- how can one ever even consider being a vegan?  What would be the point in living?!  Anyway-- a whole other blog post entirely.

In a nutshell, the above reference post attacks Ms. Paula for having "pushed" her cooking methods and recipes on everyone via her shows, cookbooks, and websites.  Now that she's a diabetic she is somehow being blamed for sharing her own passions and knowledge about southern comfort food and should somehow be held responsible for passing it on to the rest of us?!  Excuse me?  All that vegan crap you've been eating must totally have you lightheaded!  What I'd really like to say to the author of that blog post is "Chill out and cut into a nice ribeye!" It might actually make you a bit more enjoyable to be around.

How is what WE {as free and independent individuals} choose to eat suddenly the problem of celebrity chef's and the recipes they've been dishing out for years?  Aren't we humans of free will, able to decide for ourselves what we want to eat and put into our bodies?  I, for one, LOVE her cooking and think we'd actually be a lot better off as a society if we'd actually USE a stick of butter in a batch of cookies every now and again.  I mean, why mess with a good thing?  The poor kids who are succumed to being short-changed by moms who swap butter and eggs for applesauce?  I couldn't even imagine.  Why even indulge in a cookie if it's not truly "indulging"?

And why is it so horribly wrong that Paula is now an endorsed representative for a pharmaceutical company with whom she is now working to develop a new "Diabetes in a New Light" nutritional program for diabetics?  Because of her diagnosis, is she suddenly expected to simply find a new career path and NOT use her newfound passion to educate others to share what she knows?  Would any one of us - given the same situation - NOT change our tune in an effort to sustain our living? Shifting her professional focus and using her circumstances to her advantage is quite brilliant!  I love it when people think entrpreneurally.  Genius.  Pure genius, Paula!

It's absolutely ridculous that "Erik" from Vegan.com actually put this into his blog post:

"Nevermind that this meant that she went a full three years continuing to encourage people to eat the same sorts of godawful foods that likely caused her own diabetes."

Really?   The fact that she took the time necessary to figure out where to go from this point is her own business and she owes her fans and audience ZERO response or accountability.  Even if by sharing her recipes she actually was "encouraging" others to eat that way, so WHAT?? Since when did we revert to blaming others for our own choices?  Simply sharing a recipe does not force us to change our own life choices or eating habits.  We are bombarded everyday with messages from television, social media, blogs, internet news, and so on, yet ultimately the decisions about our own health and well being are our own.  If you are someone counting on a celebrity chef to teach you about the value of nutrition, then you are in need of some serious therapy, my friend.

Now, pass me those sticks of butter, ya'll and step off Paula!

Chinese New Year: Year of the Dragon

 Happy Chinese New Year!  The kids are starting to love this tradition more and more, and well -- you can probably see why!

My inlaws came by to drop off their traditional red envelopes filled with cash.  And in usual Chinese New Year tradition, I did manage to clean the floors and get all the laundry done and Jacob even got a haircut just in time to celebrate the Year of the Dragon!

My oldest asked me "Mom, does everyone get to celebrate Chinese New Year?"  I kindly told him that anyone could celebrate but there are lots of people who don't, and that's okay. 

I know how silly it is that I will actually keep their red envelopes but I just LOVE having that treasured writing on them that was put their by my mother-in-law.  I know it will be fun to look back at once the boys are older.  I think I may have saved a few of the red envelopes that even the hubs and I received before we had kids.  The hubs can't read or write Chinese but I simply just love the idea of my boys having these in their little-boy-books to look back one one day.

Family traditions are the bomb-diggity!  Happy new year!

I'm sure I've made it painfully obvious up to this point that I am *not* a fan of cooking.  I cook because my family (i.e., the kids) have to eat.  Let's face it - the hubs and I could get take out or swing through the drive-thru at Taco Bell if it were just us two.  Kinda like in the olden days--before we had kids.  But seeing as how we actually relish family dinnertime, meals must be planned, groceries must be bought, and dinner must be made. 

So, you may find it quite surprising that this week I will be trying {drumroll} not one.....but TWO new recipes.  Both of them will be simply tweaks to current recipes in my repertoire, but I am nervous nonetheless.  I guess it's a good thing there are several backup plans (i.e., fast food joints) just around the corner.

Here goes nuthin'!

 Monday: Happy Chinese New Year!  2012 is the Year of the Dragon!  I'll be making some chicken lo mein and picking up a few takeout crab rangoons from a local Chinese restaurant! 

Tuesday:  Baked spaghetti, garlic bread.

Wednesday:  Ground turkey and beef meatloaf {this is one of the new recipes I am giving a go!}, rice, steamed broccoli.  I should mention that it was actually on last week's menu but was bumped and we made something else instead.

Thursday:  Slow cooker barbecue country style pork ribs  {this is the second of the new recipes I am trying this week. Hoping to share the yumminess with you soon!}, baked potato, veggies.

Friday:  My oven baked chicken, rice, cheddar baked biscuits

Saturday: We've been invited over for a casual dinner at a friend's house.  Looking forward to heading there right after a basketball game!

Support No Name-Calling Week. Here's why I am.


 

 


I don't put up with nonsense in my house.  My boys know that.  Now, whether or not they think about that 24/7, is up to them.  And, as humans, they are known to falter.  But I don't let that excuse them. 

Recently there was an issue involving my 8 year-old and some friends on the playground during recess one school day.  I received a message from one of my VERY BEST friends in the whole wide world about something my son may have said or been involved with that was hurtful and directed toward her son.  I was devastated. 

Without boring you with all the lengthy details, suffice it to say that my son had clearly made a poor choice in his words.  Playful as they may have been, they were hurtful to the person on the receiving end.  Upon asking my son about the incident he clearly told us (with his head hung in embarassment) that he had in fact said something that was unkind and without thinking.  He was asked to pick his consequence and we moved forward from that point.  I remember talking to him with tears in my eyes about how even when we are joking or playing around, we still need to be very cautious about the words we use because the person who is receiving those words may not take it jokingly.  One thing about my son -- he's not perfect but he (for the most part) never has ill intentions.  He explained to me that he didn't know why he said what he said but that his friend didn't deserve it and that he "felt bad" about the whole ordeal.  My husband and I asked him about the times that he's been treated less-than-nice by friends before and if he would ever want to make someone else feel like that.  He of course replied, "no". 

Unfortunately, we sometimes cannot take back the words that are spoken.  I want my son to know this and engrain it in his brain!  It's ok to be forgiven but sometimes being sorry is just not enough.  I want him to have empathy, compassion, and a heart when it comes to his friends, family, and other people around him.  I feel good about the conversation we had with him about this incident and we've made it clear that no matter what is allowed in other households by other parents, it will NOT be tolerated in our home.  I think the biggest consequence for him is that he knows that we have been disappointed by his choices. 

I feel very strongly about this issue, especially when it comes to happening at school.  I can't stand parents who have the attitude of "oh, well just boys being boys" or "oh, not MY kid!"  I have made it known before that I'm not that kind of parent.  I usually refrain from getting steaming mad until I've heard both sides of an issue but once I've heard it all, I believe in fair consequence.  I also know that this will be an issue that we will revisit over and over again. 

That's why I was very happy to learn about the upcoming No Name-Calling Week intitiative.  We ALL need to focus on our kids and tune into what is REALLY happening at school!  Parents, no longer can you just sit and shrug these issues off as "no big deal" and think that it is the teachers and administrators who should deal with the problems of bullying.  And teachers and administrators should feel open enough to report these incidents (no matter how small!) to parents without being made to feel like they are being nit-picky.  I, for one, want to KNOW when my kid is involved with an issue of bullying.  How can I effectively deal with them and use these opportunities to teach him if I don't even know when or what is happening??  I think there should be mandatory training and workshops for teachers and administrators on dealing with this issue, as well as periodic assemblies, workshops, and educational programs for the kids in the classrooms.  This is not something you just "teach" them once and then it's over.  It's everyday.

DisneyBaby.com officially launches

Disney has officially launched their newest creation - DisneyBaby.com.  It is the newest parent portal aimed at helping foster and preserve magical memories for parents of infants.  The site features a variety of topics for new and expecting parents that makes it easy {and fun} to document all of the special times between parents and their babies!

Topics on the DisneyBaby.com site include "Getting Ready", "In the Nursery", "Mealtime", "Baby's Firsts", and more.  Being a proud member of a Disney-loving family, the new site has me even more baby crazy!  I've had such a great time just visiting the site and getting the chance to look through all of the fun photos and moments that parents have uploaded and shared on the new site.

It wasn't long ago that I was visiting Disneyworld, expecting an infant of my own:

 


Ah, yes....I was nearly 5 months pregnant with my sweet Jacob, who's now almost 2 and a half.  Needless to say, our family has had the Disney-itch for a while now and we're looking forward to hopefully planning a visit really soon!  Mostly, I'm just giddy at the thought of checking their new resort out.  Disney's Art of Animation Resort looks like a perfect fit for our family.  My kids would go crazy if they got to stay in one of the Cars or Nemo themed family suites!

Serve It Up Sunday: Got the meat!

I've worked long and hard to try and build up a frozen inventory of meats and I'm proud to say I will not be buying any meat this week for any of our meals.  Hooray!  It's so nice to be able to look in the freezer, see what I have, and then build meals around that.  I even have some extra country style pork ribs in there that we won't get to use this week so I've already got a menu idea for NEXT week to use those!

Since the kids are out of school on Monday this week, a few of my friends and I are taking our kids to open play gym late afternoon and then heading out for an early dinner for a fun Monday night kids eat free at a local restaurant.  Fun!  Then afterwards, I'm excited to be heading to a friend's house for our weekly Bachelor watching party.  Always a blast!  So here's what we're eating this week:

Monday: Kids eat FREE after a local open gym playdate with friends!  Love it when I don't have to cook!

Tuesday: Beef tostadas and cheese quesadillas, Spanish rice.  {Never got to make this last week, so I bumped it.}

Wednesday:  Chicken fettucine alfredo, salad.

Thursday:  Turkey + beef meatloaf, rice, steamed broccoli.

Friday:  French dip sandwiches, chips, deviled eggs.

Saturday: Pizza or out.

Sunday - Out.
