I may live in a household with very picky eaters at times, but one thing we all love is corn. All kinds of corn. We also all love tortillas. Growing up, watching my grandmothers make tortillas was something I remember fondly and I never realized then how much I'd cherish witnessing that now, as an adult.
Recently, I had the opportunity to try the new Nixtamasa product with my own family. I just love this product and the rich corn flavor it provides when made! I think I could seriously eat these Nixtamasa Corn Cakes with Green Chiles just about everyday -- they're THAT delish!
And, not only are they easy to make and fun to eat, but they are a crowd pleaser. I love how versatile they are in that you can add just about any ingredient and customize them to your tastes! Below, I am sharing what I did with mine. I hope you enjoy!
Nixtamasa Corn Cakes with Green Chiles
What you need:
- Nixtamasa corn flour, prepared
- 14 oz. can chopped green chiles, drained
- 1/2 cup grated Monterey Jack cheese
- 1/2 cup grated sharp cheddar cheese
What to do:
1. Prepare Nixtamasa according to package instructions, using water and salt
2. Add green chiles and cheeses and combine well.
3. Working with a small ball of dough at a time, flatten and form into thick, small cakes.
4. Cook immediately on skillet until done.
