In my Hispanic culture, food is and always has been a definite way that we celebrate our traditions. One of those traditions is, of course, Dia del Niño, which is coming up on April 30. Kids love to have fun with food, and one of my favorite things to do is to come up with new recipe ideas for my own kids to enjoy. I recently was inspired by Nabisco to create these tasty and fun Chips Ahoy Banana and Strawberry Quesadillas. They are the perfect combination of some of my kids' most favorite foods. I hope you'll enjoy them with your family, too.
Chips Ahoy Banana and Strawberry Quesadillas Recipe
Ingredients:
1 small tub of Strawberry spreadable cream cheese
2 Tbsp. brown sugar
1/2 tsp. ground cinnamon
4 flour tortillas (8 inch)
5 CHIPS AHOY! Chewy Cookies, crumbled
2 ripe bananas, cut into 16 slices
1/3 cup thawed frozen whipped topping
6 strawberries, each cut into 6 slices
Instructions:
MIX first 3 ingredients until blended; spread onto tortillas to within 1/2 inch of edges.
RESERVE 2 Tbsp. cookies. Top half of each tortilla with remaining cookies and bananas; fold in half.
CUT each quesadilla into 3 wedges. Serve topped with whipped topping, strawberries and reserved crumbled cookies.
