Recently, while on the Kansas Corn Tour, I learned a ton about corn, it's benefits, and most importantly - how amazingly delicious it is, especially in this recipe for Mexican Street Corn.
One of our visits was to All Things BBQ in Wichita, Kansas, where Chef Tom helped us create one of the most amazing meals I've ever had on a blogger trip! And you're in luck because Mexican Street Corn is one of those amazing recipes that I'm sharing today!
When Chef Bob showed us how easy this Mexican Street Corn was to make, I was blown away at not only how simple the process was, but truly how freaking delicious it is! Get ready for your entire family to LOVE this Mexican Street Corn!
Mexican Street Corn Recipe
{makes 4 servings}
Ingredients:
- 2 ears corn, shucked
- 1/4 cup mayonnaise
- 1 tbsp adobo sauce
- Cattleman's Grill 8 Second Ride Carne Asada Seasoning {don't leave this out!}
- 1/2 cup cotija cheese, crumbled
- lime wedges, for serving
Instructions:
Grill the corn over direct high heat (500 degrees F) until browned, rotating to brown evenly. Remove from heat.
Combine the mayo and the adobo sauce, and mix well. Brush the corn with the chipotle mayo. Season with Cattleman's Grill 8 Second Ride Carne Asada Seasoning. Sprinkle with cotija cheese.
Serve with a wedge of lime.
